 Japanese Cooking
 



Going beyond sushi and sashimi, there are so much more in Japanese cooking.  The common impression is that Japanese dishes are difficult to make.  Sure, there are particular rules to it.  However,  once you get to know the background and basics, and with a bit of technique, you will find many of the dishes quite easy to be reproduced at home
.   

When thinking about Japanese food, most people are familar with tempura and sukiyaki.  Do you know that Japanese cooking is also very big on salads, soups, braising, steaming and grilling?  They love using healthy ingredients like miso, seaweed, tofu, fish and vegetables in cooking.  Japanese cooking is a chic and healthy choice for modern life.

Our teaching approach is to make Japanese cooking as easily understandable as possible.    We explain background and basics comprehensively.  Our hands-on sessions provide opportunies for participants to experience Japanese cooking first hand and apply newly learnt techniques.  Our sit-down lunch served in Japanese ceramics enriches the whole experience.

We teach authentic dishes of both traditional and modern recipes.

"I've always thought of Japanese cooking as a very complex and mysterious process.  After attending two of Corona's cooking classes the mystery has lifted somewhat and I can now cook a few simple dishes myself.Both classes were very informative.   Not only was I able to get hands on experience in preparing the dishes but I also learnt more about the food products and where to buy them.....   All aspects of the cooking process were well thought through - ensuring that all participants could have a go at different tasks and use new cooking techniques..... the cooking classes were fun.  I laughed a lot and ate a lot and was still able to take my efforts home to share with my family."

 We Lean Towards Healthy Dishes

East Asia (countries like Japan, China, Korea)  has a long tradition of using food as medicine or simply as to enhance health and vitality. Natural ingredients are prepared by simple methods to preserve and enhance their favour and nutrients.

Drawing on this ancient wisdom, we aim to achieve a balance in taste, practicality and health when we choose our dishes.  We strive to stick to the following principles as much as possible:

    • Selection of traditional and contemporary recipes that meet modern healthy requirements.
    • Cooking with ingredients particularly renowned for their health beneifits, such as miso, seaweed, tofu, mushroom and daikon.
    • A good selection of vegetarian and vegan dishes
    • Most dishes are dairy free and many are gluten free
    • The use of oil in cooking is minimised
    • Focus on healthier cooking methods like steaming, braising, dressing, boiling, grilling, baking, pan-frying and stir-frying.
    • We introduce healthier ways of cooking fish, chicken and meat
